Prawn Salad

Some of you have been asking me to share some savoury recipes so, to give the people what they want but also show you I eat more than just desserts & protein powder :P, here is the recipe for a very easy salad I like to throw together. I will usually have 150g prawns and half a cup of brown rice and quinoa, but you can determine the amount of prawns and rice that is best for your own needs.

Ingredients:

• Prawns (however many you like)

• Olive oil

• 1 x red capsicum cut into strips

• Juice of one lemon

• Mixed salad

• Brown rice/quinoa

• Spices

Method:

– Cook prawns and capsicum in a fry pan with olive oil.

– Add juice of one lemon, spices (I like lots of chilli) and let simmer for a minute or two.

– Cover a dinner plate with mixed salad & a few tablespoons of rice and/or quinoa.

– Spoon the prawn/capsicum mixture over the salad & rice – make sure to get the sauce.

– Mix everything together & you are done!

I like to make extra and enjoy for lunch the following day ?.
