No Bake Peanut Butter Fudge | Vegan Recipe

Treat yourself with this simple and healthy No Bake Peanut Butter Fudge. Made with wholesome ingredients, no refined sugars, gluten or dairy.

Topping (optional)

  • ¼ cup raspberries
  • 1 tbsp shredded or desiccated coconut

Instructions

  • Line a loaf pan with baking paper and set aside.
  • Combine coconut oil, maple syrup, peanut butter, vanilla extract and salt in a saucepan on low heat until just combined.
  • Remove from the heat and stir through protein powder. The mixture will quickly become very thick.
  • Pour the mixture into the loaf pan and use a spatula to spread to the edges and smooth over the top.
  • Optional: Mash fresh or frozen raspberries into a jam and spread over the fudge. Sprinkle with coconut.
  • Place the no bake peanut butter fudge into the freezer to set for twenty minutes.
  • Once set, slice into twelve pieces and serve or store in the fridge for up to one week.
