Treat yourself with this simple and healthy No Bake Peanut Butter Fudge. Made with wholesome ingredients, no refined sugars, gluten or dairy.

- ¼ cup raspberries
- 1 tbsp shredded or desiccated coconut
Line a loaf pan with baking paper and set aside.
Combine coconut oil, maple syrup, peanut butter, vanilla extract and salt in a saucepan on low heat until just combined.
Remove from the heat and stir through protein powder. The mixture will quickly become very thick.
Pour the mixture into the loaf pan and use a spatula to spread to the edges and smooth over the top.
Optional: Mash fresh or frozen raspberries into a jam and spread over the fudge. Sprinkle with coconut.
Place the no bake peanut butter fudge into the freezer to set for twenty minutes.
Once set, slice into twelve pieces and serve or store in the fridge for up to one week.
