Make a batch of these little babies to set you up for the week ahead. The oats & protein will keep you fuller for much longer than a standard, sugar filled muffin and they taste just as good AND you will be saving your hard earned dollars by making your own instead of buying from the cafe ??
Ingredients to make 4 muffins:
• 2 scoops (60g) vegan vanilla protein powder
• 1 cup oats
• 1 tsp baking powder
• 4 tbsp stevia
• Sprinkle of cinnamon
• 1/4 cup egg whites or 1 egg
• 1/4 cup milk of choice
• 1/2 cup blueberries
Method:
– Mix protein, oats, baking powder & cinnamon in a bowl
– Add egg whites, milk & mix together
– Fold through blueberries
– Divide mix into a greased muffin pan (makes 4 muffins)
– Bake for 20mins at 180degrees
Easy to prepare, store them in the fridge & enjoy with some coconut yoghurt or nut butter. Prepare them at night & you will be set for the week ahead 🙂
