Chocolate Coated Cookie Dough Fudge

Wowza these just taste frikken amazing!

I put off using chickpeas in sweet recipes for SO long, I was hesistant & thought it would just taste like hummus ?. But now I regret not trying it sooner!

Don’t be turned off from experimenting with chickpeas because you will be seriously missing out! They are cheap, a great source of protein, fibre & minerals.

I used the queen; @noashealthyeats recipe as a guide for this one ☺️ Ingredients:-

• 1 can of chickpeas, thoroughly rinsed in cold water and drained on paper towel. Get them completely dry.

• 1/3 cup any type of flour (I used oat flour)

• 80g @macr0mike protein powder

• 1/3 cup maple syrup

• 1/4 cup canned coconut milk

• 3 big tbsp nut butter (I used @mayversfood PB)

• 1 tsp vanilla essence

• 100g chocolate (I used a block of @lindt_australia dark chocolate)

• Pinch of salt

Method:-

– Place everything except chocolate into a food processor and blend until a dough is formed.

– Stir through 40g chocolate chopped into pieces (40g=2 rows of Lindt)

– Spread evenly in a lined baking pan or container.

– Melt remaining 60g chocolate and spread evenly across the top (60g=remaining 3 rows of Lindt chocolate).

– Freeze for one hour and cut into 12 pieces.

You will be going back for seconds… and thirds ?.
