Ingredients Required for Greek Yogurt Parfait
Protein Powder – It is of absolute vital importance that you use a delicious chocolate protein powder for this recipe. I cannot stress enough that if your protein powder tastes like dirt then so will your parfait (insert sad face). Some favourites of mine are the Happy Way Choc Caramel (whey protein), Choc Coconut (whey protein) or Macro Mike Deluxe Chocolate Hazelnut almond protein (vegan). If you purchase Happy Way protein powders you can save 10% with my code HAPPYBLONDE.
Yogurt – I tend to use YoPro high protein vanilla yogurt to make this Greek yogurt parfait recipe, but feel free to use your yogurt of choice. Keep in mind that if you use a plain Greek yogurt, it may be a little sour. I recommend adding in a little extra stevia or maple to add a touch of sweetness.
Chocolate Parfait Layer:
- 1 scoop (30g) whey or vegan chocolate protein powder. Keep in mind if you use a whey protein you should need less almond milk as it is much less absorbent than vegan potein.
- 2 tbsp almond meal or oat flour
- 1 tbsp cacao powder
- 1 tbsp maple syrup
- 2 tbsp almond milk or your milk of choice
Vanilla Yogurt Layer:
- 1 small tub of high protein vanilla yogurt like Yopro
- 1 tsp stevia blend or vanilla stevia drops (save 10% with code BLONDE10)
- 1/2 tsp vanilla extract
How to make this Greek Yogurt Parfait Recipe
- Combine all of the chocolate layer ingredients in a small mixing bowl until smooth. Add almond milk 1 tbsp at a time until you have a thick but smooth texture.
- Combine all ingredients for the vanilla layer in a separate bowl and mix well.
- Start building the parfait in layers by adding a thick layer of the vanilla mixture to the bottom of a glass cup or jar.
- Then add a thick layer of the chocolate mixture on top.
- Add a few fresh or frozen strawberry pieces on top of the chocolate layer and repeat steps 2 and 3 until all of the ingredients are used up.
- Top with more strawberry and place in the fridge to set for 1 hour.
- Top with granola or crushed biscuits and serve.
Trust me when I say it is worth the one hour wait. The parfait needs this time to thicken up and the strawberries need this time to defrost (if using frozen strawberries). The end result will be thick, smooth, creamy and glorious! If you want something a little extra, you can layer some healthy home made jam between the layers.
Storing your Greek Yogurt Parfait
Do you experience the mad morning rush trying to get out the door and to work most mornings? Or maybe you crave something sweet immediately after dinner? Then you should definitely prepare this Greek yogurt parfait in advance and store it in the fridge.
I recommend storing in a glass jar with a lid or popping a reusable silicone/plastic cover over the bowl, glass or jar you make this in. This parfait recipe can be stored in the fridge for up to three days once constructed however it is best not to add toppings such as granola or crushed biscuits until you are ready to serve/consume as the toppings will absorb moisture and turn soggy.
