Very Vanilla Granola

I was super excited to make my own granola and this turned out exactly how I wanted; Crunchy, vanilla and paired perfectly with yoghurt!

The vanilla protein powder really gives this a beautiful sweet vanilla flavour which I love, but you can choose to leave it out if protein powder is not your thing.

You could also turn this into a cute little gift using a glass jar and some ribbon.

• 1 cup oats
• 1/2 cup Aldi’s Paleo nut & seed mix or any nuts & seeds of your choice
• 1 scoop vanilla protein powder
• 1/2 tsp cinnamon
• 3 tbsp maple syrup
• 1 tsp vanilla essence
• 2 tbsp coconut oil (melted)

– Preheat oven to 180 degrees Celsius.
– Mix oats, paleo mix, cinnamon & protein powder together in a bowl.
– Melt coconut oil and mix in the maple syrup, vanilla essence and milk into the same bowl.
– Pour wet mixture into the dry mixture and combine really well.
– Pour Mix into a baking dish lined with parchment paper.
– Bake for 25-30 minutes. Pause half way to mix everything around.
– Remove from the oven and allow to cool before storing.
