A different kind of Coconut Slice Recipe

This is not your usual coconut slice recipe made with flour, coconut, butter etc this recipe uses clean ingredients like maple syrup and coconut oil instead of sugar and butter. Using these ingredients creates a fudge like texture that is quite more-ish but more importantly the recipe has some amazing nutritional benefits. Did you know the maple syrup is high in antioxidants and contains vitamins and minerals like calcium, potassium, iron, zinc and manganese? It’s pretty cool that something so sweet and delicious can also have some nutritional benefit.

It’s important to remember that maple syrup is still a form of sugar so just because it has a WAY better nutritional profile than white sugar doesn’t mean you should guzzle it from the bottle! More importantly if you are suffering with gut issues or hormonal problems, then natural sugars like maple syrup and honey can still be problematic. If you fall into that category, I suggest you seek professional advice.

How to Toast Coconut

If you have never toasted your own coconut then now is definitely the time to start because toasting your coconut takes the flavour to a whole new level. So here’s how to do it:

  • Prepare a clean baking sheet and preheat the oven to 170C.
  • The amount of coconut you toast is completely up to you, you can start with as little as half a cup and increase to two cups or however much will fit on your baking sheet.
  • Spread the coconut over your baking tray and place in the oven for six to eight (6-8) minutes.
  • It is important to keep a close eye on the coconut as those tiny pieces are quite delicate and can burn very easily.
  • Once nice and toasted, remove the tray from the oven and allow to cool completely before storing in an airtight container.

Ingredients for Coconut Slice Recipe

  • Macadamia Butter – I buy the Noya nut butter brand however you can easily make your own by blending macadamias until they turn into butter.
  • Coconut oil – great source of healthy fats but also helps to bind this coconut slice recipe together.
  • Maple syrup –
  • Toasted coconut – see paragraph above which provides a step-by-step of how to toast coconut
  • Vegan vanilla protein powder – I like the Happy Way vegan vanilla protein powder to use in baking and recipes like this one.
  • Stevia – you can swap for monk fruit or your favourite sweetener

How to make Coconut Slice Recipe?

  1. Combine macadamia butter, coconut oil and maple syrup in a mixing bowl.
  2. Add coconut flour, toasted coconut, protein powder and stevia. Combine well.
  3. Transfer to a mini loaf tin or container lined with baking paper.
  4. Sprinkle with 1/2 tsp coconut sugar and more toasted coconut.
  5. Place in the freezer for 20 minutes to set.
  6. Slice into twelve pieces and serve or store in the fridge.
