SINGLE SERVE CHOCOLATE CHIP MUFFIN

Single Serve Chocolate Chip Muffin

Dairy free, gluten free, ooey and gooey chocolate chip blondie. Are you drooling yet? ?. Initially I was making a muffin but the consistency turned out more like a brownie (not fluffy like a muffin).

You can whip this up within 5 minutes (if you choose to microwave) and if you really want to make it EXTRA dreamy you can even top with some vanilla yoghurt or ice cream.

Ingredients:-

• 1 scoop (30g) Vanilla protein powder

• 20g dark chocolate

• 2 tbsp oat flour, almond flour or normal flour

• 1 tbsp stevia

• 1/2 tsp baking powder

• 1/4 cup almond milk

Method:-

– Mix dry ingredients together in a small bowl.

– Add milk and mix thoroughly.

– Stir through chocolate pieces.

– Transfer into a microwave/oven safe dish.

OPTIONS:-

– Zap for about 50 seconds in the microwave.

– Bake for approximately 15mins at 180degrees.
