Have you ever finished dinner and craved something sweet for dessert with nothing in sight? All of a sudden you are thinking about doing the last minute run to the convenience store/service station to pick up an unhealthy sugar filled fix. Well you just S.T.O.P right there – I got you!

You need to try this super simple microwave protein muffin recipe or ‘muffy’ as I like to call them 🙂

As long as you have some delicious protein powder handy, chances are that you already have all of the other ingredients required in your pantry and you are ready to create this quick, easy, delicious protein muffy in less than 90 seconds.

Ingredients:-
• 1 scoop (30g) vegan chocolate protein powder
• 1 tsp raw cacao
• 1/2 tsp baking powder
• Sprinkle of ground cinnamon
• 1/4 cup almond milk
• 1/2 tsp vanilla extract
• 1 tsp powdered peanut butter (optional)
• 1 tsp stevia

Mix everything in a coffee mug or bowl until smooth, microwave for approx 45 seconds, let cool slightly and enjoy.

Toppings: I love to top mine with coconut yoghurt, strawberries and/or 100% peanut butter, however the options are endless, try using banana, shredded coconut, nut butter, chocolate chips or berries.
