If you’re a peanut butter lover you MUST get your mittens on these. They melt in your mouth as you take the first bite and PB just oozes out from the sides.
It’s my last week of uni break before semester 2 commences next week so I am baking my little butt off while I still have a little free time and loving every minute of it!
Ok so for this recipe you will need:
• 45g peanut butter protein powder
• 1 tsp baking powder
• 1 tsp powdered PB or smooth natural peanut butter
• 10g coconut flour
• 45g egg whites or 1 egg
• 50g Greek yoghurt
• 70g apple sauce/purée
*If you don’t have a kitchen scale and enjoy baking I strongly recommend you purchase one. They are not expensive at all I picked mine up from Kmart for around $10.
Method:
– Mix everything together to form a dough & place in the freezer for 10mins.
– Dollop 6 spoonfuls onto a baking sheet & flatten ever so slightly into cookie shapes.
– Bake for 12mins.
– Remove from the oven and allow to cool completely. They will be VERY soft at first, you must allow them to set (patience).
– Fill with a mix of smooth peanut butter and powdered PB.
